The 2013 growing season provided more than adequate heat units and sustained hang time; perfect conditions for the later- ripening varieties such as Cabernet Sauvignon. This wine has intentionally been crafted large, with a lot of structure built in which ultimately will contribute to longevity. This wine was aged 18 months in a combination of new (about 40%) and some neutral oak. The nose shows hints of eucalyptus and loads of black fruit. On the palate juicy dark fruit such as black plums, blackcurrants, blueberries dominate while an herbaceous note of fennel seed lingers on the finish. If consuming now through 2018, consider decanting to soften the firm tannins.
Recommended food pairings: Heavily structured yet fruit-forward, this Cabernet Sauvignon will pair well with hearty and rustic
dishes. This is a prime candidate to pair with rare steaks, lamb chops and other high protein dishes. Or enjoy it with a
steak and Guinness pie or a pork roast with a root vegetable mash.
